We were eager to make wine and learn the process because we enjoyed drinking it so much! We figured we might as well order grapes and let the rest fall into place. We hand select grapes through suppliers to make sure we know where they come from. For red wines we always ferment on the grape skins to extract more flavor, color and aromas. After primary fermentation we will press the juice from the grapes and remove the grape skins. Once the press is complete we initiate a malolactic fermentation to smooth out the taste. One finished we rack the wine into oak barrels for aging! We will typically age our reds for a minimum of 12 months and our whites we will bottle immediately if we like how it tastes.
